Delicious Tuna Melts


Every morning I always ask the kids what they want to have for dinner, and sometimes I even take their suggestions into consideration...LOL. Yesterday, my oldest requested tuna melts. I love tuna melts, however with our larger family, it's not a 'cheap meal', because we need about 12 cans of tuna. Anyway, I decided to entertain the request, since it's been a while since we had them. I have to say, these were the best tuna melts EVER! My youngest even ate it while it was hot and said it was delicious! (That's how we know if something is good, if it gets eaten before we have to reheat it for him...lol) So without further ado, here's the recipe! (Remember, large family here, so you can probably cut this down if need be!)

Terrific Tuna Melts

4 crusty hoagie rolls cut in half length wise
6 12 oz cans of chunk light tuna in water, drained
1/2 jar of kalamata olives, pitted and finely chopped
3/4 c and 3 Tbsp mayo (or to taste)
1/2 finely chopped red onion
Sliced tomatoes
Provolone cheese
1 Tbsp pepper
Salt to taste

Combine tuna, olives, onion, pepper, and salt in a large bowl and stir.
Spread rolls out on baking sheet, and spread with a thin layer of mayo. Place sliced tomato over rolls. Spoon tuna mixture on top of tomatoes and top with Provolone cheese. Sprinkle with pepper. Broil for 5 minutes, or until cheese is melted and bubbly.

ok were a tuna family and yet ive never made these - they look soooo good i might just make them for dinner tomorrow! YUMMY
