Tater Tot Casserole


Rarely do I make a dinner that ALL of my kids eat and ask for seconds. In fact, I really think this is the only one. Tater Tot Casserole. There are probably 150 tater tot casserole recipes out there, but this is how I do it. I've made this twice now, and I finally have the filling to my liking, however, I have been using the Mini Crown tots instead of full size, because that's what I had in the freezer. However, I think it needs a little more potato, so next time I will use full on tots!

Remember, I have a big family, so you may be able to cut this recipe down in half. Also, feel free to add/delete some of the items if they are not to your liking.

Tater Tot Casserole (My Take)

2 lb hamburger meat
1 onion
1 giant can of mushroom soup
2 cans veggies (this time I used 1 peas, 1 corn)
1 can sliced mushrooms
2 packs shredded cheese
1 bag Tater Tots

Brown the grown beef and onion. Add the can of mushrooms at the end. Season with salt and pepper to taste. Drain. Mix in can of mushroom soup, veggies and 1 pack of cheese. Flatten in the bottom of a 13 x 9 inch casserole dish. Layer tater tots on top. Spread remaining bag of cheese over tots. Cook at 350 degrees for 15-20 minutes or until tots are done and cheese is melted. I'm sure you could put just about ANYTHING in here.

I'm So Sad


Much like this sad little onion by marinaneira, today I could cry. Today in the mail, I got a deposit back from one of the big craft shows I always do. It's normally the weekend after Thanksgiving. The letter from the promoters says that it's due to a 'horrible economy and conditions beyond our control'. I had heard rumor of some smaller shows not being put on this year, but I never thought this big a show would do it. It's in a convention center and is rather large. It makes me sad.....oh so sad!
