Every time I go in the Food Lion, I see these little sweet potato cakes in the refrigerator section. I never buy them, but I always think about what I'd do with them. Well, this weekend I had a horrible craving for Texas Steak House, so I bought them. I never did get the steak, we had ham instead, but mmmmmmmmmmm...YUM!
I topped them with a little margarine, brown sugar and cinnamon and then plopped a big Jiffy Puff marshmallow on top of them. I baked them for 12 minutes at 350, and mmmmmmmmm..they were just like the loaded sweet taters at Texas! My kids had double helpings, and then asked for more!
